The holiday season can be a very busy time of year! There is holiday baking to be done, and holiday parties to throw and attend, and the wrapping of the Christmas gifts. There are days when you just don’t feel like cooking dinner after an all-day baking session. That’s when I make this frittata, it’s super easy to throw together and really delicious. I use prosciutto and Gruyere cheese, but you can use 3-4 slices of bacon and Swiss cheese if you prefer. This will be on repeat in my house over the next couple months. Enjoy!
Holiday Time Frittata
Ingredients
- 1 dozen eggs
- 3 tbsp olive oil
- 4 oz prosciutto chopped
- 1 lb yukon gold potatoes diced
- 1 C gruyere cheese shredded
- 2 scallions thinly diced
- salt & pepper
Instructions
- Preheat oven to 400°
- Heat olive oil in large oven safe pan over medium high heat
- Add the prosciutto and potatoes, sauté until the prosciutto is browned and potatoes softened.
- Remove from heat and drain excess oil, if any
- Spread the prosciutto and potatoes evenly in the pan and set aside.
- In a large bowl, whisk eggs with salt
- Sprinkle the cheese on top of the prosciutto and potatoes and let it sit for a few minutes until the cheese starts to melt
- Pour the egg mixture evenly in the pan
- Place the entire pan in the oven and bake for 8 – 10 minutes or until the eggs are set
- Cool for 5-10 minutes and garnish with scallions
- Cut into wedges and serve
